Recipes - Pear and Walnut Salad

This is a perfect salad for a late summer picnic or barbecue, with both pears and walnuts coming into season. It is made extra special by the addition of the blue cheese, but this is optional. I would always use a Yorkshire Blue, but you can of course use an alternative blue cheese.Wash the rocket leaves and dry them.

Pick off any larger stems, and put the leaves into a salad bowl.

Chop the walnut pieces and, in another bowl, mix with the oils and lemon juice.

Cut the pears in half lengthwise and remove the stem and pips. Cut into thin slices, and add these to the dressing and nuts. Season with salt and pepper.

When ready to serve, mix the pears and dressing into the leaves in the salad bowl. Toss carefully and divide between individual serving plates.

If you are using the cheese, just crumble it over the top.

Ingredients

Serves 4

  • 115g (4 oz) baby rocket leaves
  • 85g (3 oz) walnut pieces
  • 2 tbsp walnut oil
  • 2 tbsp groundnut oil
  • Juice of ½ lemon
  • 2 pears
  • Salt and freshly ground black pepper
  • 55g (2 oz) Yorkshire blue cheese or Roquefort (optional)
