Recipes - Cucumber and Mustard Salad

Salads are the backbone of summer eating, and picnic eating, and this is classically British, using cucumbers, lettuce, sherry and mustard, with the slightly alien element of chilli.

Peel and slice the cucumber and put into a bowl. Slice the red onion finely and add to the bowl. Remove the seeds from the chilli, and finely chop the flesh. Add to the cucumber with the vinegar, sherry, lemon rind and juice and the mustard, and mix well.

Leave to marinate for 15 minutes.

Drain of any excess liquid. Season, then serve on top of well-washed crisp little gem lettuce leaves.

Ingredients

Serves 4

  • 2 cucumbers
  • 1 red onion, peeled
  • 1 small red chilli
  • 1 tbsp white wine vinegar
  • 2 tbsp dry sherry
  • Grated rind of 1 lemon
  • Juice of ½ lemon
  • 1 tbsp grain mustard
  • Salt and freshly ground black pepper
  • 1 little gem lettuce

Tip

    1. I thought of this as a starter or side salad, but if it becomes a main, bulk it up with more lettuce.
